Raw Spinach Soup

This vitamin-packed soup is quick and easy to make, and it's loaded tons of nutrients. Raw spinach is a powerful source of iron, vitamins A, C, K, manganese, folate, and magnesium.

Ingredients

  • 1 avocado
  • 1 cup water
  • 2 unwaxed cucumbers
  • 1 cup raw spinach
  • 2 green onions
  • 1 clove garlic
  • 1/3 red bell pepper
  • 1 teaspoon sea salt (adjust to taste)
  • 1 tablespoon fresh lime juice (adjust to taste)
  • ¼ teaspoon garam masala (optional, adjust to taste)
  • ¼ teaspoon curry powder (optional, adjust to taste)

Instructions

  1. Blend ½ cup of water and the avocado in a blender. 
  2. Add the rest of the ingredients one at a time, blending to desired thickness and thinning with remaining water if desired. 
  3. Soup may be served cold or warm. To warm, heat on the stovetop over low heat.  Warm only to 118 degrees to preserve enzymes of the raw vegetables.  You should be able to hold your finger in the soup without needing to pull it out.
