Healthy Peanut Butter Cookies

I can’t take credit for this recipe. I found it somewhere in my Facebook feed in the middle of the night when I couldn’t sleep and took a screenshot so I wouldn’t lose the recipe (it was just typed into a post). Unfortunately, I didn’t capture the author’s name so I apologize in advance for not giving credit. I can safely say that my brain does not fully function in the middle of the night! This recipe looked too good not to share!

Healthy Peanut Butter Cookies

Yield: 12

Ingredients

  • 1 cup natural peanut butter (room temperature)
  • 3/4 cup oat flour
  • 1/4 cup maple syrup

Instructions

  1. Preheat over to 350F (180C) and line a baking sheet with parchment paper.
  2. Add peanut butter and maple syrup to a mixing bowl.  Combine until a creamy paste forms.
  3. Fold in flour and stir until incorporated. You should be able to roll the dough into balls. Add more flour until the right consistency.
  4. Divide dough into 12 balls and place on baking sheet. Flatten each ball with a fork, forming a cross shape on the top of each cookie.
  5. Bake for 12-15 minutes or until browned.
  6. Remove from oven and allow to cool on a baking rack for 10 minutes or longer.
