Vegetarian Unstuffed Cabbage Rolls (Instant Pot Recipe)

I grew up eating Halupki, also known as Pigs in the Blanket or Cabbage Rolls. I love the taste but never want to put in the effort to make them. The version I grew up on was made with beef and rice. Nowadays, I’d prefer to eat less meat so I’ve come up with tasty vegetarian version that can be done in the Instant Pot. I hope you enjoy! Let me know if you try it.

Vegetarian Unstuffed Cabbage Rolls (Instant Pot Recipe)

Authentic-style cabbage rolls made vegetarian and cooked, unstuffed, in the Instant Pot.

Ingredients

Ingredients
  • 1 tbsp avocado oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced or chopped
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 1 3/4 tsp salt
  • Ground black pepper to taste
  • 3 handfuls of spinach
  • 2 lbs cabbage, chopped or shredded
  • 1 1/2 low sodium vegetable stock
  • 2 cups uncooked brown or long-grain rice, rinsed & drained
  • 6 oz can low sodium tomato paste
  • 28 oz can low sodium diced tomatoes
Optional Garnishes
  • Dill
  • Greek yogurt
  • Sour cream
  • Hot pepper flakes

Instructions

  1. Add avocado to instant pot and turn on to Saute setting.
  2. When hot, add onion and garlic and cook for 3 minutes, stirring occasionally.
  3. Add thyme, oregano, salt, pepper, spinach, and cabbage, and stir to combine.
  4. Add stock, rice, tomato paste, and diced tomatoes. Do not stir.
  5. Close the lid, ensure the pressure vent is set to sealing position and turn off Instant Pot saute setting.
  6. Set Instant Pot to manual for 22 minutes. It will take about 15 minutes to come to pressure before the 22-minute cycle starts.
  7. When the cycle is complete, turn the pressure vent to the venting position and let out steam.
  8. Serve with dill, sour cream or yogurt, and hot pepper flakes if desired.
