Savory Oatmeal with Picked Asparagus

I typically don’t eat a huge breakfast, but sometimes I crave savory oatmeal.  I used the pickled asparagus I made this week and added it to the bowl along with avocado, egg, wilted spinach, and green onions and topped with chia and hemp seeds. 

To make savory oatmeal, I prepare oats with vegetable broth instead of milk or water.  I also add split red lentils to make it a bit more nutritious.  So yummy!
